Black Truffle Dinner

One of our proud products in Italy is the tuber melanosporum vitt. Commonly known as black truffle, the origin of it's appreciation is dated way back in history, precisely during the Roman empire. There are cities in Italy that have become famous thanks to this little precious earthy fruit, like Norcia and Spoleto, located in Umbria the green heart of Italy. For us it is a fixed stage to have a black truffle dinner during the peak of the season which is from June to the end of July here in Australia. And thanks to our Tasmanian producer we can receive beautiful fresh truffles for our dishes. It's a love that will never end.

STARTER: Beef tartar with black truffle parmesan wafer and carasau bread 

FIRST: Black truffle and san daniele ham stuffed agnolotti with burnt butter sage and parmesan 

SECOND: Sole fillet with black truffle and jerusalem artichoke cream 

DESSERT: Black truffle chocolate fondate
